Gruyere Cheese Puffs

Directions

  1. Combine the water, butter and salt in a small saucepan.
  2. Bring to a boil and remove from the heat.
  3. Add the four and whisk vigorously.
  4. Return pan to medium heat and cook until batter thickens and pulls away from the side of the pan, stirring constantly.
  5. Remove from heat.
  6. Add the eggs, one at a time, beating well after each addition until the batter is smooth and shiny.
  7. Stir in the prosciutto and cheese.
  8. Drop by teaspoonfuls 1 inch apart onto a large greased baking sheet.
  9. Bake at 400º for 20 to 25 minutes or until golden brown.
