ingredients
- 1 lb tomatillo
- 1 jalapeno pepper
- 1⁄3 bunch fresh cilantro
- 1 slice onion
- 1 avocado
- 1 teaspoon salt
directions
- Peel and wash tomatillos. Cut into quarters and place in a blender. Follow with jalapeno, cilantro, onion, garlic, avocado and salt. Make sure tomatillos are on the bottom. Blend until smooth!

I had a stray 19oz can of tomatillos in the pantry so decided to try this. I used half of the can and then pureed the rest of the ingredients as directed. I seeded the jalapeno, but wished I hadn't. This jalapeno was a tad wimpy in spiciness, but you never know. The recipe states "one slice of onion". I used about 1/3 cup. I served it with your Skinny Enchiladas, chips, and a salad. I did like that the salsa kept well and retained a pretty color. Made for Pick A Chef 2013.
