Habanero Apple Mac and Cheese

"A crowd pleasing main dish or impressive side for large groups or intimate dining. Creamy habanero cheese sauce with chopped apples to balance the spice. Finished under the broiler with crushed fresh ground pepper kettle chips on top. This is easily my most requested recipe."

  • Melt butter in medium sized saucepan over low-medium heat.
  • Once butter is melted, combine flour and stir until well incorporated. About 1-2 minutes.
  • Add milk and wait 3-4 minutes for the sauce to warm through.
  • Add 1/2 of the cheese and stir for 2-3 minutes.
  • Add remainder of cheese and stir 2-3 additional minutes.
  • At this point, the cheese sauce should be melted and creamy. If not, keep it over low-medium heat and stir occasionally. Add any additional milk as needed to adjust for desired consistency.
  • Cook pasta according to package, drain and place in 10 inch cast iron skillet.
  • If using peppered bacon, it should be ready at this point. Chop it and mix it with cheese sauce.
  • Mix chopped apples in with pasta and pour cheese sauce over, gradually mixing as you pour.
  • Crumble Kettle brand Fresh Ground Pepper Kettle Chips over the dish and place under broiler on high until they begin to brown.
  • Serve and enjoy!
