  • In a large pot over medium high heat saute the bacon and shallots until bacon is crisp (5-10 minutes).
  • Stir in olive oil and garlic and cook stirring another minute or so.
  • Stir in tomatoes, wine and saffron and bring to a boil. Reduce heat and simmer for 5 minutes.
  • Stir in beans and fish and bring stew to a simmer. Cover; and simmer until fish is done (5 minutes).
  • Season with salt and pepper.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
