Ham and Chicken Saucy Stuff

"A quick meal with the flavors of chicken cordon bleu. I started making this in college and it's on the weekly rotation now. You can add more chicken or ham if you like a meatier sauce, more cheese if you like it cheesy and more milk if you want a thinner sauce. Healthy Request/Low fat cream of chicken soup can be used or even cream of mushroom if mushrooms are you thing. To be honest, I usually don't measure when cooking this, for me it's an add until it looks good type of thing. I usually serve this over a bed of rice but have used pasta also."

  • Cut chicken into bite sized pieces.
  • In large frying pan, melt butter. Add chicken and ham and cook until done.
  • Deglaze pan with lime juice.
  • Add cream of chicken soup, milk and cheese.
  • Heat until bubbly and cheese is melted, stir occassionally to keep cheese from browning or sticking to bottom of pan.
  • Serve over rice or past.
