Ham and Potato Casserole

ingredients
- 354.88 ml cubed cooked ham
- 709.77 ml cubed cooked potatoes
- 59.16 ml butter, divided
- 1 small minced onion
- 44.37 ml flour
- 473.18 ml milk
- 118.29 ml at least grated cheddar cheese
- breadcrumbs, to top
directions
- Place the ham and potatoes into a 1.5 qt baking dish. Set aside.
- Melt 3 tbs butter in pan, add onion and cook till clear.
- Blend in flour and milk and stir until thickened.
- Pour over potatoes and ham.
- Sprinkle with cheese and bread crumbs, and dot with butter.
- Bake at 400* for 20 minutes.

This is a great casserole! It is really comforting during the cold winter months, but I would also enjoy it any time. I probably used about 4 cups cubed (quite large cubes) and slightly more than 2 cups of ham. I also added 1 cup of the grated cheddar cheese to the sauce before pouring it over the ham and potatoes. I also added some freshly ground black pepper to the sauce. I baked mine for 20 minutes and then added the additional cheese and breadcrumbs to the top before baking for another 20 minutes. The potatoes turned out nicely browned. Thanks for sharing this keeper.

Made this for St. Patrick's Day dinner, since it's closer to traditional than corned beef, which the rest of my family doesn't like. It was a hit with everyone tonight- kids and adults alike! I personally went back for seconds. Prep was easy and fast, cook time was short and it truly was delicious! Thanks for sharing a great recipe.

My mother used to make this when I was a kid. It has always been one of my favorites - my family agrees, too. I do not use a chopped onion though; I put some onion flakes in and while it bakes it gives it a slight onion flavor. I also do not use breadcrumbs/butter on top; just lots and lots of shredded cheddar! I also put a hefty amount of black pepper in with the sauce as it thickens.
