Ham & Cheese Soup

"This is a "family favorite" around my house. It is a great way to use up leftover ham or veggies from a vegetable tray. I have even added chopped broccoli & cauliflower. To speed up prep time, use a food processor to chop the veggies and the ham."

  • In a large saucepan over medium heat; saute onion, celery, carrots, parsley and garlic in butter for 5 minutes.
  • Stir in flour, ground mustard, and pepper.
  • Add ham and cook for 1 minute stirring constantly.
  • Gradually add broth and milk; bring to a boil.
  • Cook and stir for 2 minutes.
  • Stir in cheese; reduce heat.
  • Cook and stir till cheese is melted.
  • DO NOT BOIL.
