Ham, Egg and Cheese Breakfast Bake

"A standard egg casserole at our house. Great with left-over ham or turkey. You can also add bacon or veggies if you like."

  • Add milk to eggs.
  • Mix egg mixture, salt and pepper together.
  • Spray a 9x13 inch pan with cooking spray.
  • Put bread pieces in bottom of pan.
  • Sprinkle ham or sausage over bread and sprinkle cheese over the meat.
  • Pour egg mixture over all.
  • Bake at 350 degrees for 45-50 minutes.

  1. A great breakfast bake! I cut the recipe in half and baked it in an 8 x 8 dish. I used Dave's Killer Good Seed Bread and put some baby spinach over the ham before adding the cheese and eggs. To the eggs, I added some granulated garlic and red pepper flakes. Thanks for sharing!
     
  2. I'm giving this 3 stars because it was easy to make and edible. My whole family disliked the soggy bread in it. I halved it to fit in an 8x8. Used ham and 3 sour dough pieces of bread. I put hot sauce on mine.
     
  3. Delicious! I made a few small changes. I added green pepper, used slightly less cheese, and cut up chicken sausage links instead of using ham or ground sausage. Next time I think I will add more veggies such as spinach and maybe hot peppers. Great recipe!!
     
  4. Made this this morning for breakfast. I didn't have any sausage, so I used all bacon. I also used crusts and heals that I had in the freezer to use them up! Great way to use "scraps" It was delicious! I will definitely make again! My son (7) insisted that he would hate it, but after one taste......he LOVED it! And asked me to make it everyday for breakfast!
     
  5. great recipe and so easy to cook. Next time though I think I will use half the sausage, one pound seemed like too much. I also think next time I will add some green peppers to spice it up a bit. Thank you for posting this. I will be making it again.

I live in Northwest Missouri and I'm a stay at home mom of 3 with one more on the way. I have always loved to cook and started fixing dinners at my house around age nine. My mom raised me and worked full time at her own business in our home and I learned early to read cookbooks and try new things. I love to watch cooking shows and try new recipes but I tend to be a down home kind of cook with lots of comfort foods coming out of my kitchen. With three kids we do have a few nights of convenience foods in our house every month but I am trying to build a quick and easy recipe base that lets me make most things from scratch or at least with my own flair. I love to bake but I am beginning to discover the joys and secrets of more savory cooking such as ribs, whole chickens and roasts.
