Directions

  1. Cook rice according to package directions.
  2. Steam broccoli until crisp-tender.
  3. Heat large deep non-stick skillet over medium heat.
  4. Add 1 tablespoon oil and onion. Stir-fry 4 minutes until tender.
  5. Add 1 tablespoon oil, rice and ham. Stir-fry 8 minutes until hot.
  6. Push rice mixture to the side of the skillet.
  7. Add last tablespoon oil and eggs. Cook and stir until eggs are thickened throughout but still moist.
  8. Stir eggs into rice mixture.
  9. Stir in broccoli, soy sauce and pepper. Cook until heated through. Serve.
