Ham 'n' Egg Sandwich

- 1 (1 lb) unsliced loaf French bread
- 4 tablespoons butter, softened, divided
- 2 tablespoons mayonnaise
- 8 slices deli ham (thin slices)
- 1 large tomatoes, sliced
- 1 small onion, thinly sliced
- 8 eggs, lightly beaten
- 8 slices cheddar cheese
directions
- Cut bread in half lengthwise. Hollow out top and bottom leaving 1/2 inch shell.
- Spread inside of bread shell with 3 Tbsp of butter and the mayonnaise.
- Line bottom of shell with ham, layer of tomato, layer of onion.
- Melt remaining 1 Tbsp of butter in skillet; add eggs.
- Cook, stirring occasionally, until almost set.
- Spoon into bread shell; top with cheese. Cover with bread top.
- Wrap in greased foil.
- Bake 15-20 minutes at 375 until heated through. Cut in serving-size pieces.

Wow, was this ever good. We loved everything about it. I did take some liberties because of the ingredients I had on hand. Made as written but used: baguette and left over brown sugar ham from our previously meal. So glad I did, what an awesome sandwich, we will enjoy it often.
