Hamburger Chili-Basic@fund Raiser Dinner

"A quick easy chili! I do not know where it came from but has been in my wallet for month's. Written on back of business card. Will try this spring. Very KISS method recipe for ingredients and directions. Will be serving in Madison, Wisconsin at The river Food Pantry on February 17, 2012. Aproximately 300 clients. Served over spaghetti is 2 Way Chili. Topped with grated cheddar cheese is 3 Way Chili. Add chopped white onion on top of cheese is 4 Way Chili. And 5 Way Chili is beans, heated separetly, placed on the plate then topped with spaghetti, chili, cheese and onions. These assembled Ways of chili are often referred as Cinncinnati Chili."

  • Brown hamburger in crisco, drain, set aside.
  • Can substitute 19 lbs. fresh pork sausage for 1/2 the hamburger.
  • Using same pot and drippings, saute onions until light brown, add peppers, garlic and cook 1 or 2 minutes. ADD all vegetables, chicken stock, 1/2 of water and sauce. Bring to a full boil covered.
  • Reduce heat to a 5 or 6 bubble simmer covered. Add 1/2 of spices and simmer covered 1 hour.
  • ADD remainder of all water, sauces, spices and simmer uncovered 30 minutes.
  • Prepare garnishes of cheese, onions, cooked beans, cooked spaghetti, basil, sour cream and crackers.
  • Serve chili with spaghetti on bottom and chili on top=2Way Chili.
  • Serve chili with spaghetti on bottom, chili on top, cheese on top=for 3Way Chili.
  • Serve chili with spaghetti on bottom, chili on top, chhese and onions on top=4Way Chili.
  • Serve chili with beans on bottom, then spaghetti, chili, cheese, onions=5Way Chili.
  • Add other garnishes as desired for fully "dressed chili".

Having spent the last 40 years selling recreational equipment in Southern Wisconsin, I have closed my business and finally have time to cook. I never sold anything that anyone ever "had to have". SO NOW I'M LEARNING HOW TO PREPARE THINGS, FOLKS HAVE-TO-HAVE! Been great fun and love to expermint. My wife says I cook weirdsville.
