Hamburger Pie

"This is my take on a shepherd’s pie. If you have some leftover pot roast use it instead of ground beef."

  • Preheat oven to 350 degrees Fahrenheit.
  • In a hot skillet crumble and brown the ground beef.
  • As beef begins to cook, add salt, pepper, chopped onion.
  • When meat is browned, stir in tomato paste; set aside.
  • In a 1-1/2 quart baking dish, spoon in 1/2 cup mashed potatoes; spread on bottom of dish.
  • Pour hamburger mixture on top of the potatoes.
  • Add cheese on top of hamburger.
  • Drain corn; spread on top of cheese.
  • Spread remaining potatoes on top of corn.
  • Bake for 30 minutes.
