Handel's Birthday Cake

"I made this cake for a church event the other day. Everyone loved it! If you like bananas and peanut butter, you'll enjoy this cake! ( I don't know where the name comes from, I got this from an old church cookbook.)"

  • For Cake: In a large bowl, dissolve baking soda in water.
  • Add oil and eggs; mix well.
  • Add cake mix to liquid ingredients. Blend on low speed until moistened.
  • Add mashed bananas to cake mix; mix at medium speed for 2 minutes.
  • Pour batter into a greased and floured 9x13-inch pan.
  • Bake at 350 degrees for 30-35 minutes.
  • Cool cake before frosting with icing.
  • For Icing: Cream margarine and peanut butter until light and fluffy.
  • Add powdered sugar and mix well.
  • Gradually add evaporated milk and continue beating until smooth. (you may need to add a little more milk).
  • Blend in vanilla.
  • Spread on cooled cake.

<p>Hi! I'm very fortunate to be married to my best friend! My husband and I own our own business, and I work there 3-4 days a week. We have 4 children, a girl and three boys...all out of the nest. Some of my hobbies are jogging, biking, areobics, reading, and of course trying out new recipes on Zaar. My DH and I love to go out on dates to our favorite resturant, or just go out for coffee. I just recently got a new digital camera, and am trying to figure out how to take good pictures of the food I make. It's more complicated that I thought it would be!</p>
