- 150 g self raising flour
- 150 g caster sugar
- 150 g softened butter
- 2 eggs
- lemon juice
- 2 large handfuls blueberries
- 15 ml milk
- 1 tablespoon cinnamon
- half teaspoon salt
directions
- Preheat oven to 180c.
- Grease tin.
- Set blueberries aside in a bowl/cup and leave to soak in lemon juice.
- in a small bowl, thoroughly mix together flour salt and cinnamon.
- in a large bowl, cream butter and sugar until fluffy.
- beat in eggs and milk.
- slowly stir in flour mixture and add blueberries (not lemon juice).
- Pour batter mix into tin ensuring all blueberries are covered.
- bake for 35-45 minutes *un-interrupted*
- enjoy!
