Hannah's Toffee Cookies

"I'm not much of a baker, so if I do venture out a try to bake the recipe has to be pretty easy! These, candy-like bar cookies come from a Swedish recipe from a cookbook called "Chicago Entertains"."

  • Preheat oven to 350 degrees.
  • Cream butter and sugar until fluffy; beat in egg yolk.
  • Mix flour, salt, and cinnamon; beat into butter mixture.
  • Pat thinly into un-greased 15 1/4 x 10 1/4-inch baking pan. Lightly beat egg white and brush over batter. Sprinkle with nuts.
  • Bake 25 minutes or until firm to touch.
  • Cut into squares while still warm.
  • Tips: These cookies are also attractive cut diagonally into diamonds. After cutting, remove them from the pan to cool.
