  • Coat muffin pan with non-stick cooking spray or line with paper cups (muffins will stick to them though).
  • Combine first 8 ingredients in a large bowl.
  • In a second bowl combine oil mixed with 1 tbs applesauce, 1 cup applesauce, yoghurt, egg and honey/agave nectar. Add to dry ingredients and stir only until just moistened.
  • Fold in apples and pecans if using. Pour into prepared muffin tins, sprinkle lightly with cinnamon sugar if using.
  • and bake in the pre-heated oven at 400°F for 20-25 minutes.

  1. These are really tastey and will be made frequently because both DSs LOVE these!! I was able to get a small box of oat bran (just in case we wouldn't use it all) and so I can make a few more batches. I put too much cooking spray in the muffin cups bacause I was afraid of sticking, so the spray burned a little on the outside. I added the pecans, used vanilla yogurt and cinnamon applesauce. I don't feel so bad for letting DS's eat these for lunch since they are so healthy!! Made for AUS/NZ Recipe Swap #48.
     
  2. We loved the flavor and I loved the ease in preparing. The burst of apple is what makes these muffins stand out. I did include the pecans and think next time I will add even more. Maybe another 1/4 cup. Mine didn't really rise and I got 16 muffins with a few really short ones. So next time I'm making 12 muffins and calling it good (really good). I love it when you have all the ingredients. Well, with the exception of the oat bran that I was able to locate in bulk at the local grocery store. Thanks for posting a keeper. :)
     
  3. Very tasty and moist muffin (for being so low in fat!) Plenty sweet enough for me (I used Agave Nectar). I also added about 1/2 teaspoon more cinnamon and another 1/4 teaspoon nutmeg because I like to really taste those two in my muffins. I used the optional pecans. We really liked these, especially DH as they were "not too sweet" :) I used a pear (it was REALLY ripe) instead of the apple, so these had a little lighter taste, and used 3/4 cup ground golden flax meal instead of the oat bran (personal preference). Also made these as mini-muffins (350F for ~ 13 mins), as they fit good in DH lunch bag and I don't have regular muffin tins! Another keeper recipe! Thanks Lalaloula!   5. These were great! I really loved how light the texture is; that's always a challenge with a bran muffin. I also love that they aren't sweetened with refined sugar. For us, the sweetness was just enough, though we tend to like breakfast pastries less sweet than most. I used 1/4 c pecans, and used 1 T melted coconut oil instead of 2. I will absolutely be making these again; thanks for posting a keeper. Made for Went to Market tag.
