  1. Leave root and 1 inch of stem on beets; scrub with brush. Cover with water and boil. Cover, reduce hea, simmer for 40 minutes or until tender. Drain; peel and cut into 1/4 thick slices.
  2. Combine juice, vinegar and butter in bowl. Combine sugar, cornstarch, salt, pepper in large saucepan. Gradually add juice mixture, stirring well with whisk. Bring to a boil over medium heat; cook until thick (about 2 minutes) stirring costantly. Add beets, tossing gently to coat. Garnish with orange zest.
