ingredients
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup butter, softened
- 1 teaspoon vanilla
- 2 eggs
- 2 cups plain flour
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 2 cups corn flakes
- 2 cups rolled oats
- 1 cup raisins
- 1 cup coconut
- 1 cup pecans, chopped
directions
- Cream white sugar, brown sugar and butter.
- Add eggs one at a time.
- Mix in vanilla.
- Sift together flour, baking powder, soda and salt.
- Add to sugar mixture.
- Stir in corn flakes, oats, raisins, coconut and pecans.
- Cover and Chill 1 hour.
- Preheat oven 350 degrees.
- Drop by spoon onto greased cookie sheet.
- Bake 8 minutes, being careful not to overbake.
- Cool.

Great cookies! Loved that these cookies are more "odds-n-ends" than dough! I don't care for raisins, so I used craisins instead. Since I didn't have to contend with any cookie dough snatchers, I had the full amount of dough. I only baked off 1 1/2 dozen because I didn't really need piles of cookies calling to me all weekend, but I definitely have enough dough for at least 3 or 4 dozen cookies scooped with a medium cookie scoop. I'll bake the rest during the week so I can share them with my coworkers. Thanks for posting! Made for PAC Spring 2012
