³⁄₄ cup onion, chopped
¹⁄₂ teaspoon paprika
¹⁄₂ teaspoon fresh ground black pepper
1 (32 ounce) package frozen southern style hash brown potatoes, diced
2 tablespoons butter, melted and divided
1 (10 ounce) can cream of chicken soup, undiluted (condensed, reduced-fat, reduced-sodium, such as Campbell's Healthy Request)
8 ounces light processed cheese, cubed
1 (8 ounce) carton light sour cream
cooking spray
2 cups corn flakes, coarsley crushed

directions

Preheat oven to 350.
Combine first 4 ingredients and 1 tablespoon butter in a large bowl; toss well.
Combine soup & cheese in a medium microwave-safe bowl. Microwave at HIGH 6 minutes or until cheese melts, stirring every 2 minutes. Stir in sour cream. Pour cheese mixture over potato mixture, and stir well. Spread mixture evenly in a 13 X 9-inch baking dish coated with cooking spray.
Combine cornflakes & remaining 1 tablespoon butter; sprinkle evenly over top of potato mixture. Bake at 350 for 1 hour.

This was a church potluck in a bite! Very good and easy to make. I doubled the recipe and used plain sour cream and sour cream with chives. I didn't use any low fat/low sodium, just the regular stuff. I only had to heat the soup/cheese mixture in the microwave for 2 1/2 mins and it was plenty melted. We had this for dinner with steak and veggies, then in breakfast burritos which was amazing, then again with rotisserie chicken and green beans. Very easy and I think you could even freeze it without the topping then just take out and bake. Made for PAC Fall 2012

I'm just a good ol country girl that loves to create! I call it creating...not cooking. I got this love from my mother (Love you!) and Granny (Miss you somethin aweful-RIP). I'm a homemaker and I've started my own buisness.  I have two wonderful children and three of the most beautiful, loving, sweetest grand children in the world! (I lovingly refer to all of us as the Family Circus)  My children have inherited my love of cooking; they've been helping me since they could stand in a chair in the kitchen! My grand children are learning this love as well! Then theres lots of people that have adopted me...lol. Many because they love my cooking. The others...well I haven't figured out yet why, but they always seem to show up just before dinner is being served.  Cook'em some good ol southern soul food and they just might ask if they can move in! I'm always looking for new recipes and I follow the directions (the first time anyways).
