  • 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
  • 1 bunch green onion, chop white for cooking (chop green tops for garnish)
  • 1 medium red bell pepper, small dice
  • 1 tablespoon olive oil (evoo, soy, veggie, etc.)
  • 3 large eggs
  • 6 ounces frozen spinach, excess water drained
  • 1 teaspoon salt & pepper
  • 2 ounces goat cheese, crumbled
  • 2 ounces shredded cheddar cheese
  • oil, for cook & crisp
  • Toppings (optional)

  • green onion
  • sour cream
  • salsa
  • fresh roma tomato, chopped

directions

  • 1. In non-stick pan, sauté red bell and green onion with 1 tablespoon oil until tender and browned. Place in large bowl and let cool.
  • 2. Add package of Simply Potatoes Shredded Hash Browns to bell and onion mixture.
  • 3. Also add spinach, both Goat & Cheddar cheeses, and eggs.
  • 4. Get your CLEAN hands dirty: mix the ingredients in the bowl evenly and divide into 6-8 portions.
  • 5. Heat oil in non-stick pan, medium-high heat.
  • 6. Gather a portion of hash mix, round, then flatten into pan.
  • 7. Let cook 8-10 minutes on each side, or cook until desired crispness.
  • 8. Serve with toppings of preference. I like with fresh tomato Ü
  • 9. Serve. Eat. & Enjoy!
