- 1 (20 ounce) package Simply Potatoes® Shredded Hash Browns
- 1 bunch green onion, chop white for cooking (chop green tops for garnish)
- 1 medium red bell pepper, small dice
- 1 tablespoon olive oil (evoo, soy, veggie, etc.)
- 3 large eggs
- 6 ounces frozen spinach, excess water drained
- 1 teaspoon salt & pepper
- 2 ounces goat cheese, crumbled
- 2 ounces shredded cheddar cheese
- oil, for cook & crisp

- fresh roma tomato, chopped
directions
- 1. In non-stick pan, sauté red bell and green onion with 1 tablespoon oil until tender and browned. Place in large bowl and let cool.
- 2. Add package of Simply Potatoes Shredded Hash Browns to bell and onion mixture.
- 3. Also add spinach, both Goat & Cheddar cheeses, and eggs.
- 4. Get your CLEAN hands dirty: mix the ingredients in the bowl evenly and divide into 6-8 portions.
- 5. Heat oil in non-stick pan, medium-high heat.
- 6. Gather a portion of hash mix, round, then flatten into pan.
- 7. Let cook 8-10 minutes on each side, or cook until desired crispness.
- 8. Serve with toppings of preference. I like with fresh tomato Ü
- 9. Serve. Eat. & Enjoy!
