Hawaii Five-Oh Party Sandwich

  • Preheat oven to 425 degrees.
  • Combine brown sugar, cinnamon, chili powder and vanilla extract with the pineapple in a zipper bag. Swirl bag gently to coat and let sit while the oven preheats.
  • When ready, arrange the pineapple slices on a greased baking sheet (or sheet covered in nonstick aluminum foil). Roast for 10-12 minutes on each side, using tongs or a spatula to flip them. Remove from oven when done. Leave oven on.
  • Lay sandwich rolls open-faced on another baking sheet. Place 2 slices of ham and 1 slice cheese on the bottom half of each sandwich. Heat in oven for 5 minutes.
  • Top each ham and cheese bottom with a slice of pineapple and 3 spinach leaves. Spread dijon mustard on the top halves of the sandwich rolls and place top half of roll on bottom half.
  • Slice in half and serve as appetizers. Or leave whole for a great sandwich meal.

  1. I have made the same thing except with Swiss cheese instead of cheddar and it delicious! And if you buy your pineapple already cored at the grocery store, just dump the first 4 ingredients into the plastic container that the cut pineapple came in to save yourself a container to wash or waste. Thanks for posting.
