  • Preheat oven to 350°; grease a 9-inch square baking pan.
  • In a large mixing bowl, mix the biscuit mix, sugar, and zest together.
  • Add in the pineapple chunkcs; mix together.
  • Spoon mixture into prepared pan.
  • To make the topping: in a bowl, mix the biscuit mix, sugar, and egg together; sprinkle over fruit.
  • Drizzle with melted butter.
  • Bake for 40-45 minutes or until the topping is browned.
  • Serve warm and at room temperature.

  1. This is sooo good. I used frozen pineapple chunks from Costco and 3/4 cups of Splenda instead of the sugar. I can't wait to make it again.
     
  2. Wow! I made a half batch of this tonight in a loaf pan with fresh pineapple, and I made my own imitation Bisquick substitute using recipe #35950 but without the shortening. It was really good! I think it's just about the best cobbler I've ever made, and it was really easy to make. It was great as is; but, one day, I hope to make it with the addition of maraschino cherries.
     
  3. Yummy! I wanted to make a dessert to use up some FRESH pineapple. I searched through approximately 400 recipes before I found one that did not expressly call for canned pineapple. Even though I forgot it in the oven, and the crust got a little browner than I might wish, it was absolutely delicious! I cut it into 12 servings and served it warm with vanilla ice cream. Thanks so much for sharing your rich, satisfying, easy to make fresh pineapple dessert.
     
  4. This was a terrific recipe. I had a fresh pineapple that I wanted to do something different with, so I decided to try this recipe. What a great decision! The crust on the cobbler was very good. We loved the slight crunchiness of it. I served this with some vanilla bean ice cream, and will be making this recipe over and over. Thanks so much for another winner, Di!
     
  5. I made this with the 50/50 spenda sugar baking mix. It was really sweet. A simple dessert but next time I'll cut the sugar in half. Lisa
