  1. Cut pork into 2 inch cubes. Put into a slow cooker with 2 cups of water for at least 8 hours or until tender.
  2. Drain pork and cool. When cool enough to handle, pull pork apart by hand in a separate bowl.
  3. In a large pot combine oil, peppers. onions, celery, garlic, cumin, chili powder.
  4. Cook at medium heat until tender and set aside.
  5. In a separate pan, brown ground beef and drain fat.
  6. Combine both ground beef and pork to the large pot and add the tomatoes, beans and tomato sauce with the salt, pepper, sugar.
  7. Simmer for at least 1 hour at low heat. Take care to not let the chili burn.
  8. Optional topping would be shredded cheese and /or chopped raw onions.
  9. This recipe does taste best if it is made at least a day prior to serving.
  10. This recipe does freeze well.
