  • Cut pork into 2 inch cubes. Put into a slow cooker with 2 cups of water for at least 8 hours or until tender.
  • Drain pork and cool. When cool enough to handle, pull pork apart by hand in a separate bowl.
  • In a large pot combine oil, peppers. onions, celery, garlic, cumin, chili powder.
  • Cook at medium heat until tender and set aside.
  • In a separate pan, brown ground beef and drain fat.
  • Combine both ground beef and pork to the large pot and add the tomatoes, beans and tomato sauce with the salt, pepper, sugar.
  • Simmer for at least 1 hour at low heat. Take care to not let the chili burn.
  • Optional topping would be shredded cheese and /or chopped raw onions.
  • This recipe does taste best if it is made at least a day prior to serving.
  • This recipe does freeze well.
