- 1 1⁄2 lbs fresh pork
- 1 lb ground beef
- 2 (15 ounce) cans stewed tomatoes
- 2 (15 ounce) cans mild chili beans (undrained)
- 1 (15 ounce) can tomato sauce
- 2 cups coarsely chopped sweet peppers
- 1 cup chopped onion
- 1 cup chopped celery
- 3 fresh garlic cloves (chopped fine)
- 1⁄8 cup fresh jalapeno pepper (chopped fine)
- 2 teaspoons ground cumin
- 2 tablespoons chili powder
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
directions
- Cut pork into 2 inch cubes. Put into a slow cooker with 2 cups of water for at least 8 hours or until tender.
- Drain pork and cool. When cool enough to handle, pull pork apart by hand in a separate bowl.
- In a large pot combine oil, peppers. onions, celery, garlic, cumin, chili powder.
- Cook at medium heat until tender and set aside.
- In a separate pan, brown ground beef and drain fat.
- Combine both ground beef and pork to the large pot and add the tomatoes, beans and tomato sauce with the salt, pepper, sugar.
- Simmer for at least 1 hour at low heat. Take care to not let the chili burn.
- Optional topping would be shredded cheese and /or chopped raw onions.
- This recipe does taste best if it is made at least a day prior to serving.
- This recipe does freeze well.
