- 1⁄4 cup hazelnuts
- 2 (6 ounce) salmon fillets
- 1 tablespoon apple butter
- 1⁄2 tablespoon Dijon mustard
- 1⁄4 teaspoon thyme
- 1⁄4 teaspoon black pepper
directions
- preheat oven to 375°F.
- Place hazelnuts on a baking sheet and bake for 8 minutes. Finely chop hazelnuts.
- Increase oven to 450°F.
- Combine apple butter, mustard, thyme, and pepper. Spread on salmon. Top with hazelnuts.
- Bake until salmon just flakes with a fork, about 12 minutes, depending on thickness.
- Goes great with herbed rice or savory couscous.
