"I got this recipe from another website and modified it for my own tastes. The whole family loves them and they are good for you. I usually make them the jumbo size (makes 12 jumbo)."

  • Whisk eggs and buttermilk.
  • Add remaining wet ingredients.
  • Mix.
  • In a separate bowl, mix together dry ingredients.
  • Add to wet ingredients, mixing until just combined.
  • Bake at 350 for 15-25 minutes (shorter for smaller muffins, longer for jumbo muffins).

  1. I was searching for a date bran muffin recipe with low fat and gave this a try. It requires quite a bit of chopping and preparation, but made two dozen regular-sized muffins plus enough to bake an 8x10 coffee cake, so the work is worth it to have lots of healthy snacks on hand in the freezer. The banana base is very nice, making a unique flavor. I almost skipped the blueberries, but tossed some frozen ones in and so glad I did, adding color and taste. I always put a streusel on my muffins, and a touch of cinnamon sugar as well to finish. Thank you, Dadenk!
