  • Cook beef and onion in a large skillet until the meat is brown and the onion is tender. Soak up the excess fat with a paper towel, and rinse the meat and onion mixture in a colander.
  • Rinse the beans and add to the skillet. Stir in the tomatoes, sauce, macaroni and spices. Bring the mixture to a boil; reduce heat. Simmer the meal, covered, and stir often for 15-20 minutes - or until the macaroni is tender.
  • Remove the skillet from the stove and sprinkle the cheese over the mixture. Let the cheese melt for about two minutes and serve.

  1. Good recipe, but not quite enough liquid to cook my noodles. I used egg noodles, maybe that made a difference. Either way, I added what I needed and it turned out well. Did add more seasoning though, as well as garlic and a few chopped chipotle peppers.
