Healthier Pumpkin Chip Cookies

"These are a favorite around my house. They have no oil or eggs in them but the pumpkin keeps them moist. This recipe is also easy to halve or double. And you can change this recipe easily by using any kind of chips or by repacing the chips with raisins. I have also used candied fruit at christmas time in place of the chips."

  • Preheat oven to 375°.
  • Put oatmeal in blender/food processor and grind until fine powder.
  • Combine all ingredients.
  • Drop by rounded teaspoons on baking sheets.
  • Bake for 10 minutes on slightly greased sheet pan. Remove from tray immediatly.

  1. i'm sorry but these tasted like pure flour.... i even tried cooking these everywhere from 10 minutes to 20 and they still tasted like flour...i followed this exactly and it just was a waste of ingredients, sorry
