- 2 cups Raisin Bran cereal, slightly crushed
- 1⁄3 cup boiling water
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1⁄2 cup brown sugar, packed
- 1⁄2 cup Splenda granular
- 1⁄3 cup unsweetened applesauce
- 1⁄3 cup egg substitute
- 1⁄3 cup honey
directions
- Combine crushed cereal and boiling water in a large mixing bowl. Let sit 5 minutes.
- Add remaining ingredients, Stirring just until moistened.
- Fill sprayed muffin cups (15 standard or 24 mini).
- Bake 18 to 20 minutes (standard cups) or 12 minutes (mini cups).
