  • Mix flour, baking powder, baking soda, cinnamon & nutmeg.
  • and salt together in a bowl and set side.
  • In another bowl, whisk together egg whites, oil, sugar and pineapple.
  • Pour egg mixture in to flour and stir to incorporate.
  • Mix in carrots, nuts raisins and pour in a 9 by 9 baking pan.
  • Bake 30 to 40 minutes at 350 degrees until toothpick comes out clean when tested.
