  1. In a small bowl combine the first 7, dry ingredients.
  2. In a another bowl whisk the egg white, molasses, raisins, buttermilk, and coconut oil.
  3. Add the dry ingredients into wet mixture and stir until just moistened.
  4. Fold in chopped apple.
  5. Coat 6 cup muffin tins with cooking spray and fill 3/4 full with batter.
  6. Bake at 375 for 16-18 minutes or until a toothpick comes out clean.
  7. Cool.
  8. Serve warm.
