  • Preheat oven to 350°F.
  • In a large mixing bowl, whisk the oil and maple syrup until well incorporated.
  • Add the soy flour mixture and whisk for another 4 minutes until well incorporated. T.
  • horoughly whisk in the applesauce.
  • Stir in the oats and salt and set aside. This allows the oats to soften and absorb some moisture before baking.
  • In a medium mixing bowl, sift together the flour, baking soda, baking powder, and spices. Gradually add the flour mixture to the applesauce mixture, beating well after each addition.
  • Lightly coat a 10-inch Bundt pan with cooking spray or oil. Pour the batter into the pan.
  • Bake for 45 to 55 minutes, until a knife inserted in the center comes out clean. Immediately invert the cake onto a serving plate and remove the pan.
