- In a large mixing bowl combine the bran, milk, eggs, oil and honey.
- In a second bowl, combine all the remaining ingredients.
- Add the dry mixture to the liquid and mix thoroughly.
- Fill oiled muffin tins.
- Bake in 350 F degree oven for 30 minutes, or until tops are lightly browned.
- Cool on a rack.
- When thoroughly cooled, store covered in refrigerator or freezer.

Healthy indeed! I used oat bran instead of wheat bran, and omitted the raisins, so my muffins were barely sweet, but even so I loved them! Bran gives it this pleasant grainy texture, and although they were rather dry as veggiegal mentioned, they leave you feeling all healthy :-) Since I scaled the recipe down to 6, I omitted the 1/2 egg as well, as I usually do for muffin recipes. Next time I'll try baking for a shorter time to make them less dry. Otherwise, they're really, really good!
