Healthy Bran Muffins

"This was response for a request for bran muffins using bran, not bran cereal. I have not tried this, but it does sound good"

  • In a large mixing bowl combine the bran, milk, eggs, oil and honey.
  • In a second bowl, combine all the remaining ingredients.
  • Add the dry mixture to the liquid and mix thoroughly.
  • Fill oiled muffin tins.
  • Bake in 350 F degree oven for 30 minutes, or until tops are lightly browned.
  • Cool on a rack.
  • When thoroughly cooled, store covered in refrigerator or freezer.

  1. I have to agree that these are a bit dry but that can be fixed. If you use buttermilk plus 1 tsp. of baking powder and 1 tsp. of baking soda you will see a difference. Hope this helps.
     
  2. These are the driest muffins I have tried yet. I tried the recipe because it doesn't call for cereal but not a keeper. I found the recipe 63584 which also doesn't use cereal to be much better and moister. Tom
     
  3. Healthy indeed! I used oat bran instead of wheat bran, and omitted the raisins, so my muffins were barely sweet, but even so I loved them! Bran gives it this pleasant grainy texture, and although they were rather dry as veggiegal mentioned, they leave you feeling all healthy :-) Since I scaled the recipe down to 6, I omitted the 1/2 egg as well, as I usually do for muffin recipes. Next time I'll try baking for a shorter time to make them less dry. Otherwise, they're really, really good!
     
  4. Yum-Yum! But I had a severe craving for bran muffins. The recipe was easy to make and they were very tasty. Hint: drink lots of water!! They may be even better with some diced apples. I will definately make this recipe again. I like using the wheat bran instead of cereal too.
