  • 1 medium yellow onion, diced
  • 4 cups chicken broth
  • 1 lb broccoli, washed cut into pieces (with stem)
  • 1 tablespoon garlic, minced
  • 4 ounces goat cheese
  • salt & freshly ground black pepper, to taste
  • 1 teaspoon himalayan pink salt

  • In a saute pan, saute the onions on medium-high heat until they are translucent (5-7 minutes).
  • Pour the onions into a blender and add the broth, broccoli and the garlic.
  • Blend until smooth.
  • Pour soup into a large pot and heat on medium (10 minutes). Slowly whisk the goat cheese in until smooth. Be careful not to scorch the cheese.
  • Season with salt and pepper. Add the Himalayan Pink salt and serve immediately with crusty bread.
