- 1 medium yellow onion, diced
- 4 cups chicken broth
- 1 lb broccoli, washed cut into pieces (with stem)
- 1 tablespoon garlic, minced
- 4 ounces goat cheese
- salt & freshly ground black pepper, to taste
- 1 teaspoon himalayan pink salt
directions
- In a saute pan, saute the onions on medium-high heat until they are translucent (5-7 minutes).
- Pour the onions into a blender and add the broth, broccoli and the garlic.
- Blend until smooth.
- Pour soup into a large pot and heat on medium (10 minutes). Slowly whisk the goat cheese in until smooth. Be careful not to scorch the cheese.
- Season with salt and pepper. Add the Himalayan Pink salt and serve immediately with crusty bread.
