Ingredients Nutrition

  • 1 medium yellow onion, diced
  • 4 cups chicken broth
  • 1 lb broccoli, washed cut into pieces (with stem)
  • 1 tablespoon garlic, minced
  • 4 ounces goat cheese
  • salt & freshly ground black pepper, to taste
  • 1 teaspoon himalayan pink salt

Directions

  1. In a saute pan, saute the onions on medium-high heat until they are translucent (5-7 minutes).
  2. Pour the onions into a blender and add the broth, broccoli and the garlic.
  3. Blend until smooth.
  4. Pour soup into a large pot and heat on medium (10 minutes). Slowly whisk the goat cheese in until smooth. Be careful not to scorch the cheese.
  5. Season with salt and pepper. Add the Himalayan Pink salt and serve immediately with crusty bread.
