Healthy Brown Soda Bread

"This is a recipe based on basic brown soda bread, to which I've added extra healthy stuff. Eat a couple of slices every day and you will live to be one hundred! Delicious with homemade jam. I think the hemp seeds are important if you can get them because they are moist (and very healthy!) but the recipe should still work if you miss or substitute anything other than the flour, baking soda, salt or buttermilk. You may also wish to adjust the honey or salt measures to make the bread more sweet or savory. Note: I like to roast lightly roast the seeds first to improve their flavour. Heat a frying pan over a moderate heat, add all the seeds and stir gently for about 30 seconds. Turn onto a plate to cool a little before using."

  • Preheat over to 180°C.
  • Mix all dry ingredients in a bowl except the seeds.
  • Add honey and olive oil and rub into flour using fingertips.
  • Add the seeds and mix.
  • Stir in enough buttermilk (around 200ml) to make to make a wet but not runny mixture.
  • Mix as little as possible, just enough to get everything wet.
  • Turn mixture into 1lb loaf tin and sprinkle a few more seeds on top if you wish.
  • Bake for 55 minutes.
