  • butter-flavored cooking spray
  • 13 cup cornstarch
  • 12 - 1 teaspoon ground red pepper
  • 14 teaspoon salt
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 3 egg whites
  • 1 cup shredded coconut flakes
  • 1 12 lbs large raw shrimp, peeled and deveined,rinsed and patted dry

  • Preheat oven to 425 degrees.
  • Spray a large baking sheet with butter flavored cooking spray.
  • In a small bowl combine cornstarch, pepper and salt.
  • In a small microwave safe dish heat up honey approximately 30-45 seconds.
  • Add lime juice to honey and stir.
  • Slowly add in egg whites and continue to stir.
  • Place coconut in a thin layer on a pie plate or other relatively flat dish.
  • Take each shrimp and first dip it into cornstarch mixture then in egg white mixture and finally roll in the coconut.
  • Then place on the baking sheet.
  • Lightly spray with cooking spray and bake 10-15 minutes or until shrimp is pink and the coconut is lightly toasted.

  2. I am sorry to give a low review, especially after seeing that several others had great success with this recipe. Coconut Shrimp is normally a favorite dish in my house, so I was eager to try this healthier baked version. I had trouble getting the coconut to stick properly and I also ran out of coconut before I was even halfway through dipping the shrimp. The recipe only calls for 1 cup for 1 1/2 pounds of shrimp. I checked the shrimp at the 10 minute mark and they were already getting a bit too dark, so I pulled them out. The shrimp themselves were cooked nicely, but the flavor of the coating just didn't work out for us.
     
  3. These were great! I served them with spicy mango chutney and a strawberry salad on the side..yummy!
     
  4. YUMMY! These were so delicious!! I mixed strawberry preserves with lime juice, heated it up, and used it as a dip for these sweet shrimp!

Me and my boyfriend have been together for 11 years now. We live on 40 acres and have 6 dogs and 4 Tennessee Walkers. We both work a lot of hours so there is never enough time in a day to get everything done. I absolutely love the outdoors. I also enjoy lifting weights, reading and playing with all of my beautiful animals. I absolutely love, love and love to cook. I like to cook a variety of things and also like love to bake. I like to just get in the kitchen and experiment with different things. If something does not turn out for me such as pie crust or gravy I will keep trying until I can make it work. Only problem is, when I finally make it work it may not work again the time after that. It is fun though and I do consider myself a pretty good cook for the most part. I also love slow cooker recipes. Those are my most favorite in the winter months.
