directions

  • Mix first 7 ingredients.
  • then add butter and sugar, mixing until fluffy.
  • add eggs and vanilla, mix.
  • then chips and nuts, stir until well mixed.
  • Drop by tablespoon to ungreased baking sheet,~2 inches apart.
  • Bake 350 degrees for~12 minutes.
  • (Don't overcook, will be too crumbly).
  • Note: I have adopted the use of whole wheat flour and olive oil to this recipe, should you choose not to-- use 1 1/2 cups all-purpose flour and 1 1/2 sticks margarine instead.

  1. Love this recipe! I did change it up a little bit: I didn't use soy flour, but simply used half whole wheat and half all-purpose flour, increasing the amounts of each. I also added 1 tsp of cinnamon and used 3/4 cup of raisins instead of chocolate chips. Quite delicious! Thanks for sharing!
     
  2. Amazing cookies! These got eaten up in no time, they were much loved. I made as written and used an organic olive oil, organic cane sugar and turbinado sugar. They weren't quite done at 12 minutes so I had to turn down the oven to about 335F-340F and leave them in for about another 5-7 minutes... not sure what happened there. Anyhow, they were still wonderful! Thanks for posting.
     
  3. These were very good. I did make a few changes. Like the other reviewer, I was afraid of the taste of olive oil so I used canola. I used 1 whole egg and 2 egg yokes, added about 3/4 cups choc chips, and used walnuts. I used HALF the sugar, and they still came out great! I love all the healthy grains.
     
  4. Fantastic!! I can't believe I'm the first to review these wonderful cookies! A heartier cookie but light, chewy and tender with just the right amount of chocolate. Sinful right out of the oven but store very well also. Only change I made was to use 1 1/2 sticks of butter/canola blend, only because my olive oil is very fruity and I worried that it would be too heavy. Can't wait to try these with a lighter version of olive oil. DH and the kids LOVED these, too! I have looked all over for a healthy cookie that doesn't taste it, and have finally found it!! Thanks, Stephie, for sharing the recipe.
