  • 12 cup cucumber, sliced
  • 4 tablespoons hummus
  • 16 reduced-fat crackers (I use Wheat Thins)
  • 14 cup green olives, sliced

  • Slice cucumber and green olives up.
  • Spread a little bit of hummus on each cracker.
  • Top with cucumber and green olives.
  • Multiply ingredients for more people as an appetizer.
