Healthy Macaroni Salad

"This is a recipe I have been making for about 24 years. I can't remember the lady's name who published the book I got it from, but she was a real stickler about what you feed your kids. I started making this when my boys were preschool age. I would always make sure a had a big batch when they had a sitter, so she didn't fill them up with junk, and they would be on a sugar high when I got home at night. I am still making this today and I enjoy it as a healthy meal or snack anytime. I must say I usually triple this when I make it, as there was 5 of us.It keeps well in frig for a few days, and the boys would eat it for snacks a lot. It made me feel better that they were eating healthy. I used American cheese and I must say on my bowl I would add salt. I love this dish."

directions

  • Cook macaroni according to directions on package.
  • Drain and chill, adding lemon juice to macaroni.
  • When chilled add rest of ingredients and refrigerate till serving time.

  1. I wasn't sure about this recipe because it was so simple, but it does have plenty of flavor. I used brown rice macaroni, and doubled it, though I forgot to double everything else. Still, it came out great with those proportions. I used about half the cheese, in shreds, because that's what I had. And I used lite miracle whip instead of mayo because I love miracle whip! I minced the celery and carrots in the food processor for the sake of easiness, and it created a great texture. This is a great recipe that will be perfect for keeping cold macaroni salad in the fridge during those hot summer days I don't want to heat up the kitchen. This kind of salad costs $7 per pound at my grocery store, so it's a bargain to make, too. :)

  4. great salad. I changed the ingredients a bit. Used oliveoil mayo, green onions, celery seeds and tomatoes. adding a bit of lemon sure give it pizzas. that and a bit of garlic salt.
     
  5. So good, and so customizable. I added chopped red bell peppers, and leeks (in place of the onion that others have suggested). Also added some seasoning salt, celery seed, and dill. I was hesitant to add the lemon juice (the thought of mixing lemon juice with mayo seemed questionable to me), but hubby and I both decided it was missing something, so when I added it the second day that did the trick! Might try it with ham the next time! Thanks for a great, flexible addition to my summer bbq menu!

I have always loved to cook. This got me into trouble with my wieght, because I loved to eat what I cooked. I am now a weight watcher, I have to lighten most recipes. My favorite cookbooks are Taste of Home & Taste of Home Light. MY pet peeve is boxed dinners. I do love simple and quick though. I have 3 grown sons, one is in last semester of college, one is married and a new baby is on the way, so I will be grandma in January. My daughter-in-law hates to cook, they order prepared food off the internet, that makes me crazy. ha. I love animals, but right now only have one dog. A bloodhound. She is so loveable, I would recommend this breed to anyone as long as you have patience, but they are one of the most loving breeds out there.My married son has 3 lab. retrievers,a baby will be easy after those 3 monsters, as I lovingly called them when they were pups. My oldest son has a Rottwieller. I have had 3 Rotts, they have all pasted, buy they are a really great breed. They are so smart and loveable, I guess that's why people who chose to make them bad, can do so, all they want to do is please their owners. My real passion is shoes, shoes, shoes. I also love jewelry, but shoes, shoes, shoes,!!!!! Update I am finally grandma to the prettiest baby girl ever. She was born on Jan. 15, her name is Mariah. She is perfect!
