Healthy Mashed Potatoes/Cauliflower

"These taste just like mashed potatoes but are made with cauliflower! The first time I had these, nobody could guess the main ingredient. Even my toddler son will eat these and he rarely eats vegetables. I mash the cauliflower until it is almost creamy, with some small pieces left. This could also be dressed up with some cheese, green onions, crumbled bacon or whatever else one desired. This recipe is based on the one found in the South Beach Diet."

  • Cook cauliflower until fork tender.
  • Drain and mash cauliflower by hand or in food processor until desired consistency.
  • Mix in margarine and sour cream, to taste.
  • Add salt and pepper, to taste.

  1. These were yummy Ducky. I used low fat sour cream and a little butter and they satified my craving for mashed potatoes without the carbs!
     
  2. My dad loves these, 'cuz he is on the Atkin's Diet and he can have these.....he says they are even better than regular mash 'tators...but I have 2 say I like the original kind 'cuz I love potatoes...but these are good too...and a good sub. 4 him!
     
  3. This recipe is very good. My husband loved it and he is very hard to please when it comes to food. I had just bought the cauliflower that morning and was going to steam it but then I found this recipe and decided to give it a try. I didn't have any half and half or sour cream so I just mashed it and gave it a bit of "I Can't Believe It's Not Butter" (doin the South Beach) a few sprinkles of seasoning and it was great. Will surely try it as posted next time.
     
  4. These were yummy. Not really like mashed potatoes to me but a very good cauliflower dish! I used fat free natural yoghurt in mine as that's what I use in mashed potatoes.
     
  5. Easy to make. Very Yummy and healthy. Used Fat Free Sour Cream and a little bit of butter.
