Healthy Muffins

"This is a great base recipe. I took bits and pieces from several recipes to get the perfect healthy muffin recipe. You can substitute pretty much anything for the apple and almonds. Soy milk can be substituted for the low fat milk."

  • Preheat oven to 375 and spray muffin tins or use muffin papers.
  • Mix the oats with the yogurt and let sit.
  • Coarsely chop almonds.
  • Cut 1/2 of apple into chunks and grate the other half.
  • Smash bananas.
  • Mix dry ingredients together. Mix in almonds and apple chunks.
  • Warm honey so it's just liquid.
  • Mix together honey, bananas, applesauce, grated apple and milk. Add yogurt/oat mixture.
  • Mix wet and dry ingredients together.
  • Spoon batter into tins.
  • Bake at 375 for 20 minutes.
