  1. Melt your honey, coconut oil and peanut butter together.
  2. Stir in the vanilla, salt, cocoa powder and oats (either old fashioned or quick-cooking is fine.).
  3. Add remaining ingredients. I typically use ground flax seeds and a generous amount of chopped dried cherries. The rest of the ingredients are options!
  4. Line a baking sheet with wax paper. Use a small scoop and shape your cookies close together on the wax paper.
  5. Chill at least 30 minutes.
  6. Store in a sealed container in the refrigerator and serve cold.
  7. I usually make a double batch. they keep a LONG time in a sealed box in the fridge. Separate layers with wax paper. Enjoy!
