Healthy Oatmeal Breakfast

"This tastes like an oatmeal cookie, but its definitely good for you. I like my oatmeal thick, so this recipe is pretty filling, if you like yours more wet, put some milk in at the end."

  • Put the water into the oatmeal in a microwave and oven safe bowl. (A medium sized ramekin works great).
  • Microwave until the water has been mostly absorbed/evaporated (when you shake the bowl, the oatmeal shouldn't slosh around).
  • Slice the banana in half lenthwise, then into 1/2 inch slices width-wise and stir into oatmeal.
  • Mix in the raisins, walnuts (or any kind of nut, you can even toast them if you like!), and spices (You can also use 1 tsp of pumpkin pie spice instead).
  • Make the surface of the oatmeal relatively flat with the back of your spoon.
  • Sprinkle the brown sugar on top in a nice even layer.
  • Put the bowl into the toaster oven at 350 for about 3-5 minutes.
  • Keep an eye on it! This will melt the brown sugar and just start to make it thick. Don't let it burn, so cooking time will vary depending on how close the filament in your toaster oven is.
  • You can also try to put it under the broiler, but this will take shorter so also keep an eye on it.
  • Let it cool for a minute, pour some milk on and enjoy!

  1. This is a good oatmeal recipe, and convenient because it's prepared in the microwave oven. I really enjoyed the bananas and brown sugar, and enjoyed the crunch from the walnuts. But I thought the cloves overpowered the whole thing. I will use this for my regular oatmeal recipe and probably make it often (as we try to have oatmeal as often as possible). But I will omit the cloves and try a few other nuts, because I think almond slivers would be good here, too. Thanks for sharing your recipe, Yummy InMyTummy. Made for Fall 2011 Pick-A-Chef.
