- 3⁄4 cup butter (I sometimes substitute 1/2 cup unsweetened applesauce for a softer, sweeter-and healthier-cookie)
- 1⁄2 cup white sugar
- 1 cup packed brown sugar
- 2 egg whites
- 1 egg
- 1 teaspoon vanilla extract
- 1 1⁄2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1⁄8 teaspoon ground nutmeg
- 1⁄2 teaspoon salt
- 3 cups quick-cooking oats
- 1⁄2 cup chocolate chips
- 1⁄2 cup raisins (or nuts, chips or other dried fruit- whatever strikes your fancy)
directions
- Preheat oven to 350 degrees F.
- Cream together butter and white and brown sugars until light and fluffy in a large bowl.
- Add egg whites and egg one at a time, beating well with each addition.
- Stir in vanilla.
- In a separate bowl, combine flour, baking soda, cinnamon, nutmeg, and salt; gradually stir into the creamed mixture.
- Stir in quick oats, chocolate chips and raisins.
- **Optional if using raisins: Bring 1 cup of water to a boil. Add 1/2 cup raisins, remove from heat, and soak for 10 minutes. Drain and cool before adding them to batter**.
- Drop batter by heaping spoonfuls onto an ungreased cookie sheet.
- Bake 8-10 minutes (longer if your spoonfuls are REALLY heaping). Cool 5 minutes on cookie sheet before transferring to wire rack to cool completely.

Books and cooking are my passions...I love cookbooks by default. I will begin working on a Masters in English this coming fall...hopefully I'll still have time to cook! Someday I'd like to be able to publish my own cookbook from my family's recipes, but for now I'm just going to concentrate on getting my degree and becoming a better cook.
