  • Preheat oven to 200°C.
  • In a large bowl combine bran, flour, sugar, sunflower seeds, baking powder and bicarb.
  • In a medium bowl,combine carrots, dates, orange juice, orange zest,egg and melted butter.
  • Make a well in the centre of the dry ingredients and pour the wet ingredients into the centre.
  • Mix lightly untill all ingredients combined. Don't overmix, the mixture can still be a bit lumpy and this will make the muffins lighter.
  • Spoon into a muffin tin, don't use paper cases, just brush the tin lightly with melted butter.
  • Bake in oven for 20 minutes or until skewer insterted into the centre comes out clean.
