  1. Combine the pancake mix, pumpkin pie spice, and cinnamon together in a small bowl.
  2. Add the water, vanilla, and pumpkin puree to the dry ingredients, and mix well.
  3. Coat the griddle (or a frying pan) with the cooking spray, then place over medium heat. Let the pan heat for 2 minutes.
  4. Pour pancake mix onto griddle to make 4 pancakes. When the edges harden and bubbles surface, turn the pancakes over until done.
