Healthy "Hide the Veggies" Turkey Meatballs

- 2 lbs extra lean ground turkey
- 3 whole eggs
- 1 cup whole wheat panko
- 3 crushed garlic cloves
- 1⁄2 cup finely chopped spinach
- 1⁄2 cup shredded carrot
- 1⁄2 large onion, finely grated
- 1 red bell pepper, finely chopped
- 1 teaspoon black pepper
- 1 teaspoon low sodium soy sauce
- 2 tablespoons parsley
- 1 teaspoon red pepper flakes (optional)
- 1⁄2 teaspoon cayenne pepper (optional)
directions
- Preheat oven to 375 degrees F.
- Combine all ingredients in a large bowl and mix well by hand.
- Form 1 1/12 inch meatballs and place 2 inches apart on greased/sprayed cookie sheet.
- Bake uncovered approximately 25 minutes or until done.
- You can cool them completely and place ia single layer of them in the freezer, after they are completely frozen, you can then bag them up and keep frozen until ready to use.
- Can reheat from frozen in the microwave for 5 or 6 minutes on a paper plate, or re-bake, or use a crock pot, etc. Just as you would with store bought frozen meatballs of any kind.
