- 1 kg lean ground beef
- 1 large onion, finely chopped
- 1 tablespoon olive oil
- 3 large tomatoes, chopped
- 1⁄2 teaspoon dried oregano
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon mustard powder
- 2 teaspoons sugar or 2 teaspoons brown sugar
- 1 tablespoon tomato paste
- 1⁄2 cup water
- 5 -6 hamburger buns
directions
- Gently saute the onions until they are soft - you don't want to brown them, they need to be translucent and sweet.
- Add the tomatoes, oregano, basil, mustard, tomato paste, sugar.
- Simmer gently, covered, until the tomatoes are cooked, soft and loose.
- Gently fry your beef until it is cooked, turn into the pan containing your tomato sauce. Add water.
- Simmer gently until beef is tender and mixture has obtained 'sloppy' consistency.
- Serve on split, toasted buns.
- Alternatives and additions: Speed things up with a can of low-sodium tomato puree. Chopped mushrooms, sweetcorn, chile sauce, anything you can think of that your family or friends like can be added at the last stage.

A last minute change of plans prompted me to make this for dinner tonight for my husband and (adult) son instead of the Salisbury steaks I was going to make.<br/>In an effort to keep this "healthy" according to your guidelines, I used 95% lean ground beef (trying to cut the amount of fat/cholesterol in this recipe). I also omitted the sugar from the recipe, as I don't believe "healthy foods/entrees" need added sugar. I did substitute some leftover homemade fresh tomato sauce (because it needed to be used up) in place of the large tomatoes, the tomato paste (personal preference keeps me from using canned/processed tomato paste, it tends to be bitter), and the water. Other than those minor changes, I followed your recipe. I must say the guys were disappointed in the flavor (or lack of flavor) in this recipe. I wouldn't make this again, I will stick with my own healthy, low fat sloppy Joe recipe. BTW I found this recipe makes 4 (maybe 5) servings.
