Heart Healthy Apple Pancakes

"This is a modified version of the Polish Apple Pancakes found here on Food.com. My kids devoured these and clamour for more - a fantastic, warm and delicious way to kick off a weekend or holiday. Hope you enjoy them as much as we do! (I substituted applesauce for the oil in the original recipe, then used the remaining applesauce as a topping on the pancakes in place of syrup.)"
