Hearty Chicken Soup

- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 large carrots, diced
- 2 stalks celery, diced
- 1 medium onion, diced
- 2 green onions, chopped
- 1 teaspoon summer savory
- 1⁄4 cup fresh parsley, chopped
- 1 lb cooked chicken, diced
- 2 medium tomatoes, peeled and diced
- 1⁄2 cup rice
- 1 pinch salt and pepper
- 8 cups chicken broth
directions
- In a good size pot (9L or so) on medium heat, melt butter and sauté the garlic, carrots, celery, onions, green onions, summer savory and parsley for 3-5 minutes until soft.
- Add the chicken, tomatoes, rice, salt, pepper and chicken broth. Bring to a boil for 5 minutes, then simmer for approximately 45 minutes or until the rice is cooked.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
